Today I am thankful for some fun stuff that I actually have pictures for!
1: SNOW!!! Our first real snow of the year came today...and it's still coming! It's so beautiful outside with everything blanketed in white!
2: The BEST APPLE PIE FILLING RECIPE EVER!!! Makes 25 cups filling (5 very full pies, or 6 normal)
24 cups thinly sliced apples
3 TBS lemon juice
5 cups water
4 2/3 cups sugar
1 cup cornstarch
3 tsp ground cinnamon
1 tsp salt
1 tsp nutmeg
Toss the apples with the lemon juice. Set aside. Put the water in a large pot or dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt and nutmeg. Add to water. Stir well and bring to boil. Boil for 2 minutes, then add the apples. Return to a boil. Reduce heat and cover. Simmer until apples are tender about 6-12 minutes. Cool for 30 minutes. Ladle into freezer containers, leaving 1/2 inch head space. Cool at room temperature no longer than 1 1/2 hours. Seal and freeze. Can be stored for up to 1 year!

Hey that's lots of snow...looks like you got that cememt work done just in the nick of time. What a good helper Super Girl is and so serious about it too! When is Super Boy going to put some more on his blog??? Good work on the weight loss goals. And good hunting for Tall Boy getting more meat for the year. The apple pie filling looks great and yummy. I have tried this recipe, and it is AMAZING! I even kept some filling out just to eat all by itself! Super Boy just posted his halloween post, so go check it out! So glad we did concrete last week!
Snow!!! I totally miss that first snow! And staying bundled up and cuddling in the house. So sad, it's been 78 degrees here!
